Sernik z kurczakiem


  • 200 g savoury oat biscuits crushed
  • 70 g butter
  • leeks sliced
  • 250 g Philadelphia Extra Light
  • 300 ml reduced fat sour cream
  • eggs
  • 200 g cooked chicken roughly chopped
  • 120 g sunblush tomatoes chopped
  • 50 g grated cheddar
  • 1 tbsp chopped oregano or thyme
  • green salad to serve


Heat the oven to 160 °C. Grease a 23cm spring form pan and line the bottom with grease proof paper. Melt 50g of butter and combine with the crushed oat biscuits. Press the biscuits into the bottom of the pan with the back of a spoon and refrigerate.
Heat the remaining butter in a frying pan and sauté the leeks until they are soft then set aside. In a separate bowl beat the Philly using an electric mixer until it’s smooth, beat in the sour cream then the eggs one at a time. Stir the leeks, chicken, tomatoes and oregano in and season to taste.
Pour the mixture onto the base, sprinkle the grated cheese on top and bake for 45-50mins or until just set. Remove from the oven and allow to cool in the tin for 10 mins before gently running a pallet knife around the edge of the tin to release the cheesecake then undo the spring form and remove from the tin. Serve sliced, warm or cold.
