raspberry thumbprint butter cookies
  • 2 sticks butter or margarine
  • 1 teaspoon vanilla extract
  • 3/4 cup powdered sugar
  • 2 cups flour
  • raspberry jam

Preparation Instructions:

1. First, leave the margarine or butter out to soften to room temperature.
2. Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius), and move the rack to the highest position.
3. Cream the vanilla into the butter or margarine. Then add the powdered sugar and cream it in too. Once it is well mixed, add the flour a little at a time and mix in. Stir until the dough has a smooth consistency.
4. Roll the dough into balls one inch in diameter. Place the balls on an ungreased cookie sheet about two inches apart. Press your thumb into the center of each cookie, squishing it a bit and making a little well in the middle. (Do not press all the way through the ball, though!) Spoon a dab of raspberry jam into each well, filling it but taking care not to let them overflow.
5. Bake on the high rack for 12 minutes, or until just barely starting to brown at the edges.
6. Let cool on the pan for a minute, then transfer to a rack to cool to room temperature. Enjoy!

Czekoladowe ciasteczka bez pieczenia

2 cups white sugar
1/2 cup unsweetened cocoa
1/2 cup milk
1/2 cup butter
1 tsp vanilla
1 pinch salt
1/2 cup Nutella
3 1/2 cups oats

Combine sugar, cocoa, butter and milk in a saucepan over medium heat. Bring to a rolling boil, stirring occasionally, for about 2 minutes. During this time measure out your oats and Nutella, then when the time is up, quickly mix them in to the hot mixture. Drop spoonfuls onto wax paper and let cool completely so they can harden before eating.

If your cookies turn out gooey and sticky, they didn't boil long enough. If they are crumbly, they boiled for too long. 2 minutes turned out perfectly for my stove, but experiment with your own stove to get the timing right.

Ciasteczka ciągutki

march_cookies_plate.jpg

This could arguably be the best ever cookie dough you will ever make - the secret is adding the condensed milk which gives you the most wonderful texture - crisp outside and soft centred.

Makes about 20-30 cookies (depends on the size)
Preparation time: 10 minutes
Cooking time: 15-18 minutes

225g (8oz) unsalted butter, softened
225g (8oz) caster sugar
170g tube Carnation Condensed Milk
350g (12oz) self-raising flour

150g (5½oz) white chocolate, chopped
175g punnet raspberries

Method
1) Preheat the oven to 180ºC, 350ºF, Gas Mark 4.
2) In a large bowl, cream the butter and sugar, until pale and then stir in the condensed milk.

3) Sift in the flour and then work into a soft dough with your hands. Mix in the chocolate.

4) Take a small handful of dough and flatten with your fingers.

5) Place 2-3 raspberries into the centre of the cookie and fold over the sides of the dough to encase the raspberries.

6) Repeat with the remaining dough. Place onto parchment lined baking trays, spacing well apart and bake for about 15-18 minutes or until golden brown at the edges, but still a little soft.

7) Leave to cool slightly and set before transferring to a cooling rack.

The dough without the raspberries will keep in the fridge for 2-3 days or for about 1 month in the freezer - freeze in small slightly flattened chunks and bake as required!

TipsTry these other combinations: * Roasted hazelnuts and dark chocolate * 3tbsp cocoa mixed into plain dough with white and dark chocolate chunks added at the end. * Dried cranberries and macadamia nuts * Ripple in some Carnation Caramel and add some chopped stem ginger * Orange zest, raisins and cinnamon

Coraline cookies - bakerella

Kruche ciasteczka z witrażykiem

Sugar Cookies(Makes about 24)2 cups flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup butter
1 cup sugar
1 egg
1 tablespoon vanilla extract

About 4 rolls hard candy, such as LifeSavers
To crush the candy:Separate the candies by color, so that each color can be crushed separately.
If you crush all the colors together they will melt into a murky brown color in the cookies.
Put one group of colors in a small plastic bag or between sheets of plastic wrap.
Use a mallet or rolling pin to crush the candy.
How  small you make the pieces will depend on how large an area you cut out of the cookies.
Smaller holes will need slightly smaller pieces of candy to fill the area.
Repeat for other colors.  Set the candies aside.
To  make the cookies:Combine the flour, salt, and baking powder in a small bowl.  Set aside.
With an electric mixer, cream together the butter and sugar.
Add the egg and vanilla and beat well.
Add the flour mixture and mix until well blended.
Wrap and refrigerate for at least 30 minutes before rolling out.

Preheat oven to 350 degrees F.
Line baking sheets with parchment paper.

On a lightly floured surface, roll out half of the dough to 1/4-inch thickness.
Cut out shapes with cookie cutters.
Use a smaller cookie cutter or a knife to cut a shape from the center of the cookie.
Transfer the cookies to the prepared baking sheets.
Use a spoon to place the crushed candy in the cutout area.
The candy should fill the space and be about level with the top of the cookie.
Remove any candy pieces that fall on the dough or they will color the dough.
If you plan on hanging the cookies later, make a small hole with a toothpick at the top of each cookie.

mozna wsadzic caly cukierek jesli sie miesci w otworze

Repeat procedure for remaining cookies.

Bake for 8 to10 minutes, or until the candy melts and the cookies are just starting to brown.
Remove the cookies from the oven and allow them to cool about 10 minutes on the baking sheets.
When the candy centers are firm, use a spatula to transfer them to wire racks to cool completely.

Kruche ciasto z malinami i lekką budyniową pianką

  • 2 łyżeczki proszku do pieczenia
  • 3 łyżki cukru pudru
  • 5 żółtek
Masło pokroić w kostkę, szybko zagnieść z pozostałymi składnikami ciasta (można również składniki zmiksować w malakserze). Jeśli ciasto będzie zbyt sypkie, dodać 1 - 2 łyżki wody. Podzielić na 2 części - około 60% i 40%, każdą zawinąć w folię spożywczą, zamrozić. Tą czynność można zrobić dzień wcześniej.
Blachę o wymiarach 33 x 20 cm wysmarować masłem, wyłożyć papierem do pieczenia. Odstawić do całkowitego wystudzenia.
Delikatna budyniowa pianka:
  • 5 białek
  • 1 szklanka drobnego cukru do wypieków
  • 1 opakowanie cukru wanilinowego (16 g)*
  • 2 opakowania budyniu waniliowego lub śmietankowego, bez cukru (2 x 40 g)
  • 1/2 szklanki oleju słonecznikowego
Ponadto:
  • cukier puder do oprószenia
Następnie powoli wsypywać proszek budyniowy, cały czas miksując, by dobrze się rozpuścił.

Placki ziemniaczane

Składniki: (na 4 porcje)
1 kg dużych ziemniaków
2 jajka
2-3 czubate łyżki mąki (zależy od konsystencji masy)
1-2 cebule (opcjonalnie)
2 ząbki czosnku (opcjonalnie)
sól
pieprz

olej do smażenia

Do podania:
śmietana gęsta 12%

Ziemniaki, cebulę i czosnek obierz i zetrzyj na tarce. Dodaj jajko, mąkę i dopraw solą i pieprzem. Dokładnie wymieszaj i odlej nadmiar wody.

Gdy rozgniecione ziemniaki ostygły, mieszamy je w dużej misce razem z mąką i jajkiem i ugniatamy ciasto.

Zamiast twarogu użyłam popularnego w Anglii serka Philadelphia

Składniki

kruche ciasto:
3 szklanki mąki
4 łyżki cukru pudru
1 łyżeczka proszku do pieczenia
ok. 200-220 g masła
5 żółtek

masa serowa:
3x300 g zwykły serek Philadelphia
niepełna szklanka cukru
3 jajka
2 łyżki mąki
125 g masła

pianka i dodatki:
1 duża puszka brzoskwiń (polecam z Lidla)
5 białek
3/4 szklanki cukru

forma:
prostokątna 25x40
okrągła tortownica (należy pamiętać o szczelnym owinięciu folią aluminiową aby podczas pieczenia złączeniami nie wyciekła płynna masa serowa)

Wpierw przystępujemy do przygotowania ciasta kruchego, można je np. zrobić dzień wcześniej jeśli chcemy sobie zaoszcędzić czasu w dniu pieczenia sernika.
Na blat wysypuję mąkę, dodaję cukier puder, proszek, masło i siekam aż masło będzie w mniejszych kawałkach. Dodaję żółtka i zagniatam aż ciasto będzie jednolite. Dzielę na 2 części, owijam w folię i chowam do zamrażarki. (ciasto można wyrobić też w misce jak kto woli)

Następnie przystępujemy do wyrobu masy serowej.
Dodaję ser, mąkę i masło (wszystkie składniki w temp pokojowej) i miksuję do uzyskania jednolitej masy.

Masa czeka sobie w misce, tymczasem wyciągamy jedną część ciasta kruchego z zamrażarki i ścieramy ręcznie lub robotem (łatwiej i szybciej). Międzyczasie włączamy piekarnik i nagrzewamy do 180 oC.

Uwaga! Przygotowania do wypieku chleba zajmują 24h! - 12h jeśli mamy już aktywny, dokarmiony zakwas (omijamy wówczas etap tworzenia zaczynu).

Zaczyn:
5 łyżek zakwasu z lodówki
6 łyżek mąki żytniej
4 łyżki wody
Proporcje mąki i wody można ciut zmienić tak by masa miała konsystencję śmietany

Mając zaczyn możemy przystąpić do wyrobu ciasta:

zaczyn lub świeży zakwas
2 szklanki mąki pszennej razowej (w UK white flour wholegrain)
1 szklanka wody
sól (wg uznania - ja daję łyżkę)
1/4 szklanki ziaren lub otrębów (opcjonalnie)

Mieszamy. Masę przekładamy, a właściwie przelewamy do foremki i ...

Smacznego :)
